Our story

François Hamelin is a devotee of fine cuisine who has enjoyed cooking gourmet dishes since his early childhood. He loves to delight his guests with his culinary talents.

A graduate of the I.T.H.Q. (École hôtelière du Québec in Montréal) in 1986, François has worked in some of the most prestigious hotels, including Jasper Park Lodge in Alberta. In 1988, he continued his culinary training at Roger Verger’s famous 3-star Michelin restaurant “Le Moulin de Mougins” in France. In the 1990s, he opened a market-chef catering service in Quebec City, where he promoted Quebec’s regional products.

François loves France and especially Provence, where ever since his childhood, he has explored the cuisine of the sunny south, its tastes and smells, its markets with their abundant fresh produce and the way the local people celebrate life. Since 2007, he has lived in Vancouver, where he shares his skills and his joie de vivre with his customers.
